Mount LeConte Breakfast Casserole

Ingredients:

10 eggs
2 1/2 cups of milk
1/4 cup of chopped onion
1/2 cup Velveeta cheese
1/2 cup shredded sharp cheese
3 slices of bread, buttered and cubed
1 cup sausage
1/4 cup green pepper, chopped

Directions:

Preheat oven to 350°F.

Brown sausage with onion and pepper. Drain the sausage mixture on a paper towel. Blend eggs and milk. Butter a 9"x13" baking pan. Put bread cubes in the bottom of the baking pan. Spread cheese over the bread, then sprinkle sausage mixture over all. Cover and refrigerate overnight.

Bake for 45 min to 1 hour or until set.

This will serve 8 adults.
