Black Bear Ridge Sausage Muffins

Ingredients:

2 lb. pork sausage, hot or mild
1/3 cup green onions, finely chopped
1-1/2 tsp. packed brown sugar
1-1/2 cups  Bisquick baking mix
1/4 tsp. ground red pepper
1/2 tsp. dry mustard
2/3 cup milk
1/2 c. finely grated Cheddar cheese

Directions:

Preheat oven to 400°F.

Grease the bottoms of muffin pans. Crumble sausage in the skillet, and add chopped onion.  Cook until the sausage is done.  Stir to keep the sausage in small pieces.  Drain well.

In a medium bowl, combine baking mix, brown sugar, dry mustard, and red pepper.  Stir in the sausage mixture.  Add milk and cheese. Mix just until blended.  The batter will be thick.

Fill muffin cups about 2/3 full, spreading batter to the edges of cups.

Bake 20 to 25 minutes or until golden brown.  Cool slightly before removing from the pan.
